菌类意粉 *Fungi Pasta

马六甲有一家墨西哥餐厅,餐厅的环境不会给客人很大的压力,走的是平民路线,但食物确实是高级的享受,分量大,价钱中高。他们家的墨西哥参我都爱,其中一道非墨西哥菜单也是我很爱吃的 Fungi Pasta.

当然自己做的没有他们家的好吃,至少这还是一道很不错的意大利面。我很喜欢意大利餐,我也喜欢菇类,把两个我喜欢喜欢的东西放在一起,原来真的是有种很意外的感觉。


食材
鸡肉菇........ 8-10 大片(撕小片一些)
大头白菇..... 3-4 颗(切片)
金针菇........ 一小把
牛奶.......... 1 杯
高汤.......... 1 碗
盐............ 适量
蒜米......... 1 汤匙
大葱......... 大1/2粒(切碎)
牛油......... 1汤匙
橄榄油...... 3汤匙
意大利面... 1 人分 
食水........... 适量

 
煮法:
1. 锅里放大概300ml 的食水,加少许盐。煮滚后加入意大利面,煮至面熟。面一熟就离锅,在意面里加如一汤匙的橄榄油,搅匀待用。
2. 先热锅然后把所有的菇放入锅内干炒,炒至菇类干水。
3. 再热锅,然后放入牛油。牛油遇热溶解后,加入剩下的橄榄油。先加入碎葱煮至软透,然后再加入蒜米炒至金黄。
4. 加入高汤,再加入牛奶。

5. 放入刚煮过的菇类。
6. 加入一些盐调味。
7. 把煮好的意面放入酱汁里捞即可。

Ingredient:
8-10 pieces of oyster mushroom (shred into smaller pieces)
3-4 pieces of button mushroom (white, cut into slices)
Some enoki mushroom
1 mug of cow milk
A glass of chicken stock (liquid)
Salt
1 tbsp of finely chopped garlic
1/2 big onion (finely chopped)
1 tbsp butter
3 tbsp olive oil
Tagliatelle (serving for one)
water 

Instructions:
1. Boiled about 300ml water and cook tagliatelle until soft and tender. Remove tagliatelle from pot. Add in 1 tbsp of olive oil and mix well with tagliatelle.
2. Heat a pan and fried all the mushrooms until it turns a bit brownish. Please ensure mushrooms do not contains too much water in it.
3. Heat the pan again and melt the butter first, then follow by adding olive oil. Fried onion until it is soften, then add garlic to fried.
4. Add chicken stock and milk. 
5. Add all the fried mushroom.
6. Add salt to flavor. 
7. Put tagliatelle into the source and mix them evenly. You may then serve the pasta.

番茄炒蛋 *Fried Tomato with Eggs

天气大热,没什么胃口的话可以试一试煮一道番茄炒蛋当佳肴。清淡爽口的番茄炒蛋不只煮法容易,连续要准备的材料也很简单。


食材:
番茄........ 4 粒 (像切橙一样切片,然后去籽)
鸡蛋........ 2 粒 (蛋花)
蒜米........ 1 汤匙
食油........ 适量
盐........... 适量

做法:
1. 热锅后先把番茄放到干锅里翻炒。主要原因是把番茄的水分先逼走。
2. 把番茄取出后,再热锅,先炒蒜米。
3. 再把番茄倒入锅里和蒜米炒匀。
4. 加入蛋花,加盐就可以了。

Ingredients:
4 tomato (cut into pieces and remove seeds)
2 chicken eggs (beat)
1 tbsp finely chopped garlic
cooking oil
salt

Instructions:
1. Fried cut tomato in dry pan. This is done to ensure all liquid in tomato is removed.
2. Remove tomato from wok. After that, heat the wok again with some cooking oil and stir fried garlic.
3. Put tomato back to the wok. Stir well with garlic.
4. Finally add eggs and salt to this dish.

通心菜炒马来占 *Fried Water Spinach With Belacan

通心菜炒马来占想必是人人都会爱上的一道菜。这是小时候的味道,也是家喻户晓、最简单的一道菜肴。


食材:
通心菜........ 1 把 (切节)
虾米.......... 4 汤匙
蒜米.......... 1 汤匙
葱头碎....... 2 汤匙
指天椒....... 1-2 条 (切粒)
马来占....... 半汤匙
食油.......... 适量 
盐............. 适量

做法:
1. 热锅后先把马来占干锅炒香。然后取出盅碎。
2. 再热锅然后加入食油。炒香葱头碎,蒜米、马来占、虾米、辣椒 (跟着次序加入锅内)。
3. 加入通心菜炒至熟后即可。可加盐调味。

Ingredients:
some water spinach (cut into 3-4 inches long)
4 tbsp of dried shimps
1 tbsp of finely mince garlic
2 tbsp of finely mince shallot
1-2 red chilli
1/2 tbsp Belacan
cooking oil
salt

Instructions:
1. Heat the wok and fried Belacan in dry wok. Remove from wok and pounce Belacan.
2. Heat the wok again with some cooking oil. Stir fried shallot, garlic, Belacan, dried shrimps and chilli (by order).
3. Add water spinach in wok and cook with the rest of the ingredient. You may add salt while cooking just to add flavor

滑蛋河 *Fried Flat Noodle In Soup

滑蛋河是广东话的一种说法。在我的家乡我们都称它为'鲁果条'。基本上它就是把炒好的果条淋上蛋汁,就这样。

滑蛋河并不难煮。有时候很想自己煮东西来吃,然后又不想费时费神的时候就会弄这个来吃。简单又好吃!


食材:
白色果条..........1 包
蒜米............... 2 汤匙
鸡肉丁............ 1 小碗 (腌胡椒粉、盐、蜀粉)
菜心............... 1 小碗 (切节)
虾.................. 10-12只 (去背泥后腌胡椒粉和盐)
墨鱼片............. 1 小碗 (腌胡椒粉和盐) 
黑酱油............. 2 汤匙
蜀粉................ 2 汤匙 (加入少许水内溶解)
鸡蛋................ 2 颗 (打成蛋花)
蚝油................ 适量
墨鱼露............. 适量
食油................ 适量
食水................ 适量

做法:
1. 把买回来的果条一条条的分离。
2. 热锅后先把蒜米炒香,然后再下果条、黑酱油、蚝油、墨鱼露。炒好后离锅。切记:果条和酱油等东西炒匀后就得立刻离锅。果条炒太久的话很容易绵。
3. 再热锅,加入很少的食油,然后再次炒香蒜米,然后加入食水。
4. 水滚后,加入虾、墨鱼片、鸡肉丁、菜心等食材。
5. 然后再加入蚝油。
6. 水滚后加入蛋花。先让蛋自己沉入底部,过一会儿就搅开它。
7. 加入加了水的蜀粉即可。

Ingredients:
1 pack of flat noodle
1 tbsp of finely chopped garlic
1 small bowl of diced chicken (marinate with pepper & salt)
1 small bowl of choy sam vege
10-12 medium sized prawn (marinated with pepper & salt)
1 bowl of cut cutterfish (marinated with pepper & salt)
2 tbsp dark soya sauce
2 tbsp of corn starch (dilute in very little water)
2 chicken eggs (break and stir)
Oyster sauce
Cutter fish sauce
Cooking Oil
Water

Instructions:
1. Separate flat noodle from each other after removing it out from the plastic bag.
2. Heat the wok and firstly stir fried the garlic. Next put in flat noodle, dark soya sauce, oyster sauce and cutter fish sauce. Do not fried flat noodle for too long. Remove the flat noodle from wok as soon as the noodle mix well with all the sources.
3. Heat the wok again. Add very little cooking oil in the wok, then stir fried some garlic again until it turns a bit golden in color.
4. Add water to wok, once water is boiling, you may put in diced chicken, prawns, cutterfish and vege. 
5. Add a little bit of oyster sauce to the gravy.
6. Add steered eggs.
7. Lastly add diluted corn starch to the gravy. The gravy will turn to be a little sticky.
