肉碎干捞面 *Noodle with Pork

偶尔,很怀念大马的肉碎干捞面。以前在马六甲上班的时候,因为上班时间是10点,通常都会和小华先叹了早茶,在各自驾车去上班。

怀念一碗肉碎干捞面、一杯kopi-o、和一份报纸的早餐。









肉酱的食材
猪肉碎.......... 1 大碗
蒜米.............. 1 汤匙
蚝油.............. 1 汤匙
酱油.............. 1 汤匙
玉蜀黍粉...... 少许
水.................. 少许

面配料的食材:
面.................. 2 粒
酱油.............. 1 汤匙
麻油.............. 1/2 汤匙
胡椒粉.......... 少许
葱油.............. 少许
黑酱油.......... 1/2 汤匙

肉酱的做法:
1. 肉碎腌蒜米以及酱油,再加少许黍粉。
2. 热油后,把肉碎倒到锅里,但不要立刻炒开。如果直接把肉炒开的话,猪肉就会出水,最后把鲜甜的猪肉汁给逼到汤汁里去,猪肉的滋味会变差了点。把猪肉下锅后,等一边熟了后才把另一边翻过来。
3. 猪肉炒熟后,加入蚝油然后一直炒至均匀为止。可以加入少许的水。之后即可。

面条煮法:
1. 烧开水,把面放到锅里水煮至熟。面滤水备用。
2. 另外把酱油、麻油、葱油、胡椒粉和黑酱油准备在一个碗里,把滤过水的面条放到碗里调至均匀。
3. 再把肉酱放到面条上面去即可。

Ingredients for meat sauce:
1 bowl minced pork
1 tbsp finely chopped garlic
1 tbsp oyster sauce
1 tbsp soy sauce
corn flour

Ingredients for noodle:
2 noodle
1 tbsp soy sauce
1/2 tbsp sesame oil
pepper
fried shallot and oil
1/2 tbsp dark soy sauce

Directions for meat sauce:
1. Marinate minced pork with soy sauce, garlic and a little bit of corn flour.
2. Heat the oil then cook the pork. Do not stir it until the pork is cooked (the side that is attached to the pan or wok). This is to lock the natural taste of pork. Turn to another side when the other one is cooked. Once both sides are cooked, you may stir it.
3. While stiring, add oyster sauce and some water to cook for another 3 minutes, then it is done.

Direction for cooking noodle:
1. Boil water and cook noodle until it turns to be soften and cooked. Drain noodle from the hot water.
2. Add soy sauce, sesame oil, fried shallot and oil, pepper and dark soy sauce on plate. Pour noodle into the plate and begin to mix it with all the sauces. Make sure mix evenly.
3. Put 3-4 tbsp of meat sauce on top of noodle and it is ready to serve.
