被里被外

冬天的时候 被里被外是两个不同的世界

被里适当的温热 让人很想裹在里面长期冬眠

睡久了 开始热起来了 又有种想踢被的念头

一旦把被踢开 凉风阵阵 立刻起鸡皮疙瘩

盖也不是 不盖也不是

重棉被也好 轻棉被也好 都盖不久

我想 我们两个人应该是太热情了

一直在大被里散发热气

真顶不顺

White Christmas

最近收到很多大马朋友的email, 大家都祝贺我今年能过一个white Chritmas。但来了这里两年多了,雪是由下了几次,但却还没那个机会堆雪人。今年也将是我在这里过第3 个圣诞节了,但从来还没机会过个white Christmas。也许因为global warming 的关系,这几年的春天早来了,秋天迟来了,下雪天也越来越少了。

雪呀雪,再为我下一次大雪吧!让我了了个心愿,有个机会堆个又大又高的雪人!

Recently I received many emails from friends in Malaysia, sending me seasonal greeting and wishing me a merry White Christmas. However, Leeds does not have white Christmas for years. Due to global warming, spring always comes earlier, autumn comes late and it seldom snow now in Leeds.

This is my 3rd Christmas in UK, still haven't got any chance to build a big-tall snowman. If possible, I want to make a snow angel as well! Hehehe....

冬至。汤圆


没出首都念书前,每一年的冬至都是和家人热热闹闹得一起过。在祖母家,祖母的几个媳妇,加上几个女孙、男孙都围着大桌子一起搓汤圆。红的、白的,每人的手上都有好几条大人搓好了的糯米团。顽皮的就乘机搓了飞机、人型等等。煮好了再分大家拿回家时,就看看谁家的运气好会拿到异型的汤圆了!

除了圆形汤圆,每一家一定会分到至少1 双‘宝树’的红汤圆。我把它称为‘宝树’是因为它的形状像树一样:一个树干,上面开叉成另外4支小树枝,然后4支小树枝的中部放了一颗小圆球。整体上,就像元宝一样,里面托着一颗圆圆的球。我想,这是祖母在中国福建的一个习俗吧?

搓了祖母家的汤圆,幸运的话就赶得及到外婆家再做一次。同样的,和表兄妹、阿姨和舅母们一起一边搓汤圆,一边小声说,大声笑。

比较喜欢吃外婆的汤圆。外婆都是买了糯米再请人磨成糯米粉的,吃起来的口感当然比菜市场卖的现成糯米粉好吃很多。

我比较偏爱吃甜品,加上我又超爱糯米,我一天里可以吃好多、好多碗QQ的汤圆。曾经还呆在神台前面等蜡烛烧完,因为蜡烛一烧完就可以拿神台上的汤圆来吃了!

冬至,让人思亲。盼望一月的来临,我即将回去和家人聚首。

尽责 *Thanks to Leeds Police Officers!

At 10:54 hrs on 30th Nov 2008, officers observed your vehicle as having a sat navigator holder on display at XXX which could be potential target to a thief. In addition to the thief, the risk of damage to your vehicle is increased.

We advise that in future you remove all items of property or secure them out of sight before you leave your vehicle unattended.... bla... bla... bla..."

12月1 号那一天收到这样的一封信。收到这样的一封信,我对这里的authority figure 感到十分的尊敬及感谢。他们在巡警时时多么的认真,都有注意到所有可能引起罪案的疑点。最重要的是他们还很尽责的把这件risk 写信通知property 的主人。我在想,大马的警官会向他们那么做吗?他们会否也写信通知property owner 呢?有或者视而不见?

I received a letter from Leeds Area Community Safety on 1st Dec. Thanks them for sending this notice to me, I really appreciate their affort and hard work. Leeds police officers really spend their day loitering and checking around the neighborhood, to ensure safety of the neighbourhood. I was thinking if the same thing happens in Malaysia, will police officers in Malaysia send me the friendly reminder too? Will they?

腌芒果 *Mango Pickle


食材:
芒果........ 10 粒
小辣椒.... 5 条
甘草........ 1 小把
糖............ 适量
盐............ 少许

做法:
1. 芒果去皮、去芯,再把芒果切片。
2. 辣椒切粒。
3. 把以上的食料参在一起,调匀即可。

Ingredients:
10 green mango
5 chilli
a handful of licorice roots
sugar
salt

Directions:
1. Skinned mango and remove the seeds. Cut into pieces.
2. Cut chilli.
3. Mix all the ingredients evenly.

Lasagna





食材:
Lasagna 皮..... 4 片(盒装)
橄榄油............ 2 汤匙
牛油................ 2 汤匙
大葱................ 1 粒(切粒),1/2 粒(切条状)
芹菜................ 1 枝(切粒)
红萝卜............ 1 条(切粒)
牛肉碎............ 1 碗(大概200g)
红酒................ 2/3 杯
Tomato Puree..... 2 汤匙
胡椒粉
蒜米............... 1 汤匙
Mozzarella 乳酪..... 1 碗(丝)
番茄............... 4 粒(切碎)
面粉............... 3 汤匙
牛奶............... 300ml
叶桂香........... 1 片

Bechamel 酱的做法:
1. 把牛奶倒入锅内, 加入叶桂香和切条状的大葱。把火侯维持在滚度以下。煮好了熄火,把所有的大葱和叶桂香挑起,牛奶备用。
2. 另外热锅,把牛油煮溶了后加上面粉。要一直不停的调匀。
3. 把(1)加入(2)中,再调匀,然后用慢火煮至酱汁变稠。
4. 加入少许盐及胡椒粉。

牛肉酱的做法:
1. 热锅,加入橄榄油,然后开始炒蒜米和大葱。
2. 接下来再把芹菜和红萝卜炒开。
3. 把(2)炒匀后,加入牛肉炒至牛肉熟为止。
4. 加入番茄和Tomato Puree,调匀后再加红酒,盖锅煮至酱变稠。可以加一些盐调味。

Lasagna 皮的准备方法:
1. 煮水,把lasagna 皮一张张的那去煮至软化,备用。

整个过程的做法:
1. 烤盘里先搽上一层的牛油。
2. 把第一层的lasagna 皮盖上去,然后铺上牛肉酱,再铺上bachamel 酱。撒上一些乳酪。
3. 一直重复(2) 至烤盘被铺满为止。
4. 最后一层铺上厚厚的乳酪。
5. 先开热烤炉大概3分钟,然后用220摄氏的热度,把lagsana 拿去烤至表面稍微变金黄色即可。

Ingredients:
4 pieces lasagna pasta
2 tbsp olive oil
2 tbsp butter
1 chopped onion
1/2 sliced onion
1 chopped celery
1 chopped carrot
1 bowl (about 200g) minced beef
2/3 mug of red wine
2 tbsp tomato puree
salt
pepper
1 tbsp chopped garlic
1 bowl shredded mozzarella cheese
4 chopped tomato
3 tbsp flour
300ml fresh milk
1 bay leaf

Directions for making bachamel sauce:
1. Add milk, bay leaf and sliced onion into pot and cook under boiling level. Once it is done, remove onion and bay leaf from pot. Keep for use.
2. Heat a heavy saucepan with butter and cook until it melts. Add flour to stir until both are evenly mixed.
3. Add (1) to (2) and stir until the sauce is thickening.
4. Add some salt and pepper.

Direction for making beef sauce:
1. Heat the wok with olive oil, fry garlic and chopped onion until soften.
2. Add carrot and celery to stir until soften.
3. Add beef to stir until it is cooked.
4. Add chopped tomato and tomato puree and stir until evenly mixed. Add red wine and simmer the pot of sauce until thickening. Add some salt and pepper.

How to prepare lasagna pasta?
1. Boil a pot of water, add pasta to cook until soften.
2. Drain and prepare for use.

Directions:
1. Spread some butter on the baking container/plate.
2. Spread the first piece of pasta on top, then follow by spreading beef sauce and bachamel sauce. Sprinkle some mozzarella cheese on top.
3. Repeat (2) until the baking container/plate is full.
4. Sprinkle more cheese on the most top.
5. Pre-heat oven for about 3 minutes, bring the baking container to oven to bake with 220 degree celsius heat, until lasagna turns to become more brownish in color.


薄饼 *Spring Roll





食材:
薄饼皮........ 1/2 包
豆干............ 1 小碗(切粒)
芽菜............ 1 小碗(去尾)
乌桂豆/四季豆..... 1 小碗(切粒)
红萝卜........ 1/2 小碗(切丝)
虾仁............ 1/2 小碗
盐................ 适量
鸡精粉........ 适量
食油............ 适量

做法:
把全部的料炒过后,用薄饼皮包起,再炸过就可以了。

1/2 packet spring roll wrapper
1 bowl diced toufu (the harder type)
1 bowl bean sprout (remove the root)
1 bowl diced drawf bean
1/2 bowl shreded carrot
1/2 bowl shelless prawns
salt
chicken stock
cooking oil
Directions:
Fry all the ingredients and wrap it with spring roll wrapper, then bring to deep fried until it turns brownish.

海鲜白酱意大利粉 *Tagliatelle With Scallops in Button Mushroom & Cream Sauce


食材:
Button Mushrooms..... 1/2 碗(切片)
生瑶柱........ 1/2 碗
虾................ 1/2 碗(去壳)
橄榄油........ 3 汤匙
牛油............ 3 汤匙
蒜米............ 1 汤匙
柠檬汁........ 2 汤匙
双酯奶酯.... 200ml
意大利粉Tagliatelle..... 350ml
芹菜碎叶(干的)..... 2 汤匙
牛奶............ 1/2 杯
盐................ 适量
鸡精粉........ 少许
胡椒粉........ 适量
水................ 适量
做法:
1. 煮一锅滚水,加上适量的盐,先把意大利粉烫软,捞起待用。
2. 虾和生瑶柱可以腌上少许盐。
3. 热锅后,加上橄榄油及牛油,先炒香蒜米,再把生瑶柱炒半熟,然后加上虾与生瑶柱炒熟为止。
4. 加入button mushroom 一起炒大概一、两分钟。
5. 加入牛奶、双酯奶酯和柠檬汁。煮到汤汁便浓稠。再加上少许胡椒粉、鸡精粉、盐调味。洒上芹菜叶调匀。
6. 把少许的(1) 放在盘子上,然后淋上海鲜白酱,捞一捞即可。

Ingredients:
1/2 bowl sliced button mushroom
1/2 bowl scallops
1/2 bowl shelless prawns
3 tbsp olive oil
3 tbsp butter
1 tbsp finely chopped garlic
2 tbsp lemon juice
200ml double cream
350g tagliatelle
2 tbsp chopped dried parsley
1/2 mug fresh milk
salt
chicken stock
pepper
water
Directions:
1. Cook tagliatelle in salted boiling water until tender but still firm to the bite. Drain and serve in plate.
2. Marinate prawns and scallops with some salt.
3. Heat the wok, add olive oil and butter to cook with medium-low heat. Fry garlic until it colored, then add scallops and prawns to stir until cooked.
4. Add button mushroom to stir for another 1-2 minutes.
5. Add milk, double cream and lemon juice and cook until the sauce is thickening. Add a little bit of pepper, chicken stock and salt for flavour. Spinkle parsley and stir until even.
6. Add (5) on (1) and toss well before served.

自制松脆皮Pizza *Mini Pizza




材:
Puff Pastry..... 2 片
香肠............ 2 条(切片)
Cheddar....... 适量
番茄酱............. 适量
做法
1. 在puff 皮上涂一层番茄酱。
2. 把切好的香肠摆在puff 皮上。
3. 再把乳酪洒上去。
4. 放到烤炉里烤至puff 皮松脆。

2 pieces pastry
2 sausages
chedder cheese
ketch-up

Directions:
1. Spread 1 tbsp of ketch-up on pastry.
2. Place sliced sausages on top.
3. Spinkle shreded cheese on most top.
4. Bake in oven until pastry turns into abit brownish and crispy.

你缺钱用吗?

前两天打了一个越洋电话回家
妈咪用那种很不好意思的口语问:
你缺钱用吗?
我很奇怪,怎么会那么说呢?

原来银行里投资5年的计划到期
妈咪说上一回银行寄来了一张支票
把我五年来的本利和花红全都给寄回来了
他帮我拿去存了
可是过了几天当她在拿簿子去盖印时
他很惊讶怎么钱都不见了
可是没理由呀,因为簿子有记载被提出来了

就这样,她和爸怀疑上一次请他们来欧洲玩用完了我们的储蓄
所以钱一进去,很快的被我们提出来了
听到她落寞的声音,我觉得很好笑,但心里却很温暖

可怜的他们不懂现在的银行可以直接上网开定期户口
然后再把钱汇到新户口里

解释了后,妈咪也哈哈大笑了一场
我真的没缺钱用啦!

改良的韩国石锅伴饭 *Korean Style Mixed Rice in Stone Pot

上回去意大利的时候吃过一次的石锅伴饭,一直念念不忘。很简单的一个伴饭,就是把一堆的生菜捞在白饭里,然后再淋上酱汁,再伴一伴就可以了。前几个礼拜自己试了食锅伴饭。当然我用的食料和之前吃到的有一些不同,但那个味道还是一样的好吃!





食材:
红萝卜........ 1 条(切丝)
黑木耳........ 1 碗(切丝)
鸡蛋............ 2 粒(两人用)
黄瓜............ 1/2 条(切丝)
猪肉碎........ 350g
蒜米............ 1 汤匙
蚝油............ 1 汤匙
酱油............ 1 汤匙
胡椒粉........ 适量
食油............ 适量
水................ 适量
盐................ 适量

做法:
1. 用1/2 汤匙蒜米、胡椒粉和盐腌猪肉碎。最好能腌过夜。
2. 热油后,先爆香剩下1/2汤匙的蒜米,然后把猪肉碎放到锅里煮。猪肉碎一放下去锅头后先不要翻动。先让一面遇热熟了再煮另一面,后来才可不停的翻动肉碎,让肉碎松散。
3. 加入蚝油和酱油,一直炒至均匀为止。加水,然后用中-满火焖肉碎大概30-40分钟。
4. 另外再起锅煎一面荷包蛋。一面荷包蛋是指不翻身的蛋。一定要保留蛋黄水水的。
5. 把红萝卜丝、黄瓜丝、黑木耳丝和肉酱放到白饭上,再加一个荷包蛋,慢慢的开始把这一切搅拌在一起。
6. 搅匀后即可吃了。

Ingredients:
1 shreded carrot
1 bowl shreded black fungus
2 chicken eggs (for 2 persons)
1/2 shreded cucumber
350g minced pork
1 tbsp finely chooped garlic
1 tbsp oyster sauce
1 tbsp soy sauce
pepper
cooking oil
salt
water

Directions:
1. Marinate pork with 1/2 tbsp of chopped garlic, pepper and some salt over night.
2. Heat the oil, fry garlic until colored, then add pork to stir. Do not stir pork immediately. Wait until both side are well cooked before stiring it.
3. Add oyster and soy sauce, stir until even. Add some water and simmer for 30-40 minutes.
4. Heat another wok, fry eggs. Make sure the york is 50% cooked.
5. Serve hot rice on plate, add carrot, black fungus, cucumber and (3) on top, then put (4) on the most top to serve.
6. Before eating, toss everything up well.

Bonfire Night (5/11/08)

如常,Leeds City Council 都会花一笔钱在Leeds 6 个不同的地方庆祝这个节日。当然,每一年最大的庆典是在Roundhay Park。每年会有大概70,000 人到这里一起庆祝Bonfire Night。

去年我们是在Hyde Park 目睹和参与这一个节目。今年我们去了Roundhay Park,想体会一下不同的Bonfire Night。

当晚还有请歌手现场演唱。演唱是在6:30pm 开始,bonfire 是在7:30pm 正开始点燃,而烟花是在8:00pm 正开始燃烧。当晚的烟花燃烧了20 多分钟。

问题来了。。。因为人太多,大家都想一齐涌出去,结果我们在露天停车场等了大概1个钟,才能把车开到出口。人太多了,见识一次就够了,明年我还是回去Hyde Park 庆祝
好了!


Bonfire Night is also known as Guy Fawkers Night. It is an annual event celebrated on 5th November. Back in 5th Nov 1605, Guy Fawkers and a group of Catholic conspirators were alleged to be attempting to blow up House of Parliament in London. In order to remember this, British has celebrated it with bonfire.

Leeds City Council held Bonfire Night at six different places in Leeds every year. The biggest Bonfire Night is always at Roundhay Park, with 70,000 spectator each year.

This year, it started with a live concert at 6:30pm. Bonfire started at 7:30pm and fireworks started at 8pm sharp. The fireworks last for more than 20 minutes.


老早已经把一大堆木材堆在一起了,还堆了那么高!

火开始燃烧,慢慢的从小火变大火。






即使是站在200公尺以外,还是会感觉到非常非常的闷热。



好热!脸烫烫的!



对我来说脸的部份是热了点,但因为当晚的天气很冷(大概9摄氏),

整体上还是感觉到很舒服的!

鸡胸奶脂意大利粉 *Fettuccine With Chicken and Onion Cream Sauce


食材:
橄榄油.......... 1 汤匙
牛油.............. 1 汤匙
蒜米.............. 1/2 汤匙
鸡胸.............. 1 个
大葱.............. 1 粒(切碎)
鸡精粉.......... 1/2 汤匙
双脂奶脂...... 150ml 
牛奶.............. 150ml
Parmesan 或 chedder 乳酪..... 3 大汤匙
意大利粉 fettuccine (加蛋的).. 450g
水.................. 大量
盐.................. 适量
胡椒粉.......... 适量

做法:
1. 意大利粉用有盐份的滚水煮软为止。过冷水,把适量的意大利粉放在盘子上待用。
2. 鸡肉腌盐和胡椒粉, 然后用牛油把它煎熟。煎熟后再切片。
3. 另外热锅,加橄榄油和牛油。把蒜米炒香,大葱炒软为止。
4. 加入牛奶、奶脂、乳酪和鸡精粉。调匀,煮至汤汁变浓。
5. 把煮好的汤汁淋在盘子上的意大利粉。再把鸡肉片摆上去。

1 tbsp olive oil
1 tbsp butter
1/2 chopped garlic
1 chicken breast, cut into slices
1 chopped onion
1/2 tbsp chicken stock in powder
150ml double cream
150ml fresh milk
3 tbsp shredded Parmesan or chedder cheese
450g fettuccine with egg
water salt pepper

Directions:
1. Cook fettuccine in boiling salted water until tender but still firm to the bite. Drain and transfer to serving plate.
2. Marinate chicken with salt and pepper. Fry with butter until cooked. Cut into bite-size pieces.
3. Heat olive oil and butter in large frying pan with medium-low heat. Add garlic and onion to fry until colored.
4. Add milk, double cream, cheese and chicken stock. Cook until sauce is thickening.
5. Add (4) on (1) and placed chicken on top before served.

火腿番茄意大利粉 *Pasta in Tomato Sauce and Ham



食材:
橄榄油........ 1 汤匙
牛油........... 2 汤匙
大葱........... 1 粒(切粒)
罐头火腿...... 1/2 罐 (可以用午餐肉取代)
蒜米........... 1 汤匙
罐头碎番茄.. 1 罐(800g)
意大利通心粉..... 450g
干芹菜........ 2 汤匙
Parmesan 或 chedder 乳酪..... 6 汤匙(削丝)
盐.................. 适量
胡椒粉.......... 适量
水.................. 大量

做法:
1. 把意大利粉放入1 大锅的加盐滚水中煮,煮至意粉软化为此。备用。
2. 热锅后,加入橄榄油和牛油。然后把蒜米炒香和大葱炒软ca为此。
3. 加入火腿炒一会儿,再加入番茄、盐和胡椒粉。
4. 用中火煮30-40分钟,煮至汤汁变浓。
5. 加芹菜和乳酪,再把意粉倒入汤汁锅中调匀即可。

1/2 ham in can (could replace with luncheon meat)
1 tbsp finely chopped garlic
1 can (800g) chopped tomato
450g macaroni
2 tbsp chopped dried parsley
6 tbcp shredded Parmesan or chedder cheese
salt
pepper
lots of water

Directions:
1. Cook the pasta in plenty of boiling salted water until tender but still firm to the bite. Drain and transfer to a serving dish.
2. Put olive oil and butter in saucepan over medium-low heat. Add garlic and follow by onion to fry for 10 minutes, until it is soften and turn lightly brown.
3. Stir in ham, tomato, salt and some pepper.
4. Simmer for 30-40 minutes until sauce is thickening.
5. Add pasley and cheese, then pasta to stir until all are evenly mixed.

08年的万圣节



去年的Halloween 什么都没准备
害得小孩子们喊了"trick or treat" 后失望的看着我


今年买了一大桶糖子,心里还怕会不够分
还很兴奋的把糖子摆美美的,等小鬼们来敲门

六点后 天已经完全的黑暗了
等呀等,还没人敲门
再等。。。七点了,还是没人敲门
我和小华一直开门,看看附近有什么动静
结果十点过去了,这种时间不会再有父母带着小孩来喊"trick or treat" 了
我也没再期望什么,应该不会有人敲门了

不知道怎么搞的
今年的小鬼都去了那里呢?
那一桶糖,够我和小华把牙吃烂

懒虫冬眠

最近这几天,小华成了我的定时闹钟
谢谢小华的耐心,一直跑上楼唤我醒
可是就是爱赖床
天气太冷了,能裹在厚厚的被里是一项非常非常幸福的事

我问小华,明年回去大马之前才叫醒我 好吗?
我真的很想冬眠

有时候小华为了叫醒我
把香喷喷的早餐放在我的鼻子前
你说。。。能不醒吗

就因为这样,最近会感觉到少少内疚
他都得自己弄早餐,感觉到自己真的是一个很失败的女人
嗯。。。我打算明天早一点起来
不要再做一条大懒虫

Toffee Apple


前两天又半夜跑去ASDA逛,买了一个Toffee Apple回家试一试
去年的Halloween已经见过它了,但那时候没胆量试,所以没买下来
今年无论怎么样,总得试一次
很想知道苹果拿去浸巧克力到底是什么滋味
外表看起来很可爱,圆圆、胖胖、滑滑的
顶端又洒上了七彩缤纷的小糖子
好可爱!

有一点不舍得咬下去
咬下去后其实味道不怎么样
基本上就像是一口吃苹果,一口吃巧克力的那种感觉
不像吃巧克力草莓,可以直接一口把它丢到嘴里去,然后让它慢慢的在嘴里融化
苹果太大了,只能一口一口慢慢咬,在慢慢嚼
加上咬下去苹果的时候,外层的巧克力会脱落
说真的,吃得很没瘾
反正吃过了就算了

自制辣椒油 *Special Made Chilli Sauce for Dipping

上一回去罗马居住在杨姐那儿时,吃到了杨姐自制的辣椒油。杨姐很爽快也很无私的和我们分享做这个辣椒油的方法。因为加上麻子的关系,这辣椒油会变得很香。再说自制的不会比买的油多,所以吃起来完全不会让人家有腻的感觉。喜欢辣椒的朋友,看到了这个辣椒油你是不是感觉到头顶在冒汗,然后嘴里到酸酸、有一种想流口水的感觉呢?





食材:
辣椒干(磨碎的)
芝麻
麻油
少许盐


做法:
1. 芝麻和辣椒干的用量应该是1:1。
2. 干锅炒香芝麻,炒至芝麻的颜色稍微变褐色。但切忌,炒麻子时不可用大火,否则很容易把芝麻炒焦。芝麻炒好后起锅待用。
3. 把盐、辣椒干和芝麻参在一起。最好是让辣椒干在最上面一层。
4. 再热锅,把麻油烧热。立刻把烧热的麻油倒入(3)内,淋在(3)的上面。
5. 搅一搅允(3)就可以用来当辣椒配料了。

chopped dried chilli
sesame seeds
sesame oil
some salt


Directions:
1. The amount of dried chilli and sesame seeds shall be 1:1.
2. Heat the wok without oil, stir sesame seeds until it colured.
3. Put dried chilli, salt and fried sesame seeds in a small bowl.
4. Heat the wok again, this time with sesame oil. Then pour hot sesame oil to (3).
5. Stir (3) until evenly mix.

年龄与好奇心的对比


从小,好奇心就很重
总是问个没完没了
哪怕危不危险,只要能解答心理的答案,死命都会去想办法找回来
有时候很怀疑自己的前世是不是一只猫
要是同样的能有九条命
至今也不懂死几次了

常常都是好奇心把我带到从未去过的地方,做一些未作过的事情
但是,年龄和好奇往往成了对比
年龄越大,好奇心也减少了
也许人老了,牵连到生活的东西也多了,思想也比较成熟了
行动之前,常得深思熟考
想到了后,那一份热忱也不再沸腾
结果最后只有思,没有动
久而久之
成了一只懒洋洋的

肉碎干捞面 *Noodle with Pork

偶尔,很怀念大马的肉碎干捞面。以前在马六甲上班的时候,因为上班时间是10点,通常都会和小华先叹了早茶,在各自驾车去上班。

怀念一碗肉碎干捞面、一杯kopi-o、和一份报纸的早餐。









肉酱的食材
猪肉碎.......... 1 大碗
蒜米.............. 1 汤匙
蚝油.............. 1 汤匙
酱油.............. 1 汤匙
玉蜀黍粉...... 少许
水.................. 少许

面配料的食材:
面.................. 2 粒
酱油.............. 1 汤匙
麻油.............. 1/2 汤匙
胡椒粉.......... 少许
葱油.............. 少许
黑酱油.......... 1/2 汤匙

肉酱的做法:
1. 肉碎腌蒜米以及酱油,再加少许黍粉。
2. 热油后,把肉碎倒到锅里,但不要立刻炒开。如果直接把肉炒开的话,猪肉就会出水,最后把鲜甜的猪肉汁给逼到汤汁里去,猪肉的滋味会变差了点。把猪肉下锅后,等一边熟了后才把另一边翻过来。
3. 猪肉炒熟后,加入蚝油然后一直炒至均匀为止。可以加入少许的水。之后即可。

面条煮法:
1. 烧开水,把面放到锅里水煮至熟。面滤水备用。
2. 另外把酱油、麻油、葱油、胡椒粉和黑酱油准备在一个碗里,把滤过水的面条放到碗里调至均匀。
3. 再把肉酱放到面条上面去即可。

Ingredients for meat sauce:
1 bowl minced pork
1 tbsp finely chopped garlic
1 tbsp oyster sauce
1 tbsp soy sauce
corn flour

Ingredients for noodle:
2 noodle
1 tbsp soy sauce
1/2 tbsp sesame oil
pepper
fried shallot and oil
1/2 tbsp dark soy sauce

Directions for meat sauce:
1. Marinate minced pork with soy sauce, garlic and a little bit of corn flour.
2. Heat the oil then cook the pork. Do not stir it until the pork is cooked (the side that is attached to the pan or wok). This is to lock the natural taste of pork. Turn to another side when the other one is cooked. Once both sides are cooked, you may stir it.
3. While stiring, add oyster sauce and some water to cook for another 3 minutes, then it is done.

Direction for cooking noodle:
1. Boil water and cook noodle until it turns to be soften and cooked. Drain noodle from the hot water.
2. Add soy sauce, sesame oil, fried shallot and oil, pepper and dark soy sauce on plate. Pour noodle into the plate and begin to mix it with all the sauces. Make sure mix evenly.
3. Put 3-4 tbsp of meat sauce on top of noodle and it is ready to serve.

干炒辣肉加炸豆腐 *Fried Toufu & Spicy Pork

本来是想煮平常煮的那一道蚝油肉碎豆腐,突然心血来潮,手痒痒,随意的弄了一道也是很简单的豆腐菜肴。没有蚝油的汁,把那种香菇、姜和辣椒的原汁原味呈现了出来。说真的,很开胃。就因为这样,今天我吃的饭也多了。。。







食材:
日本蛋豆腐..... 1 条
梅花肉.......... 1 条(去油然后切成小片)
蒜米.............. 1 汤匙
小葱.............. 1 粒(切碎)
姜.................. 1 小片(大概2‘ X 2' 大,切碎)
红色的大辣椒..... 1/2 条(切薄片)
香菇.............. 2 朵(切粒)
盐.................. 适量
胡椒粉.......... 适量
酱油.............. 适量
黍粉.............. 适量
红萝卜.......... 少许(切粒,可以免除)
食油.............. 适量


做法:
1. 豆腐去袋子后切片。
2. 大量的油热后,加上一小把盐,再把豆腐那去炸至金黄色。取出,待用。
3. 肉用胡椒粉和酱油腌过。
4. 再热2 汤匙的油,照着这个顺序炒:蒜米、小葱、姜、香菇、肉、红萝卜、辣椒。
5. 加入盐调味就可以上锅了。
6. 把肉料倒在豆腐上面即可。

Ingredients:
1 Japanese toufu with egg
1/2 bowl tiny diced pork belly
1 tbsp finely chopped garlic
1 finely chopped shallot
1 finely chopped ginger (about the size of 2X 2 inches of ginger)
1/2 sliced chilli
2 Chinese mushrooms, diced
salt
pepper
soy sauce
corn flour
some diced carrot (alternative)


Directions:
1. Remove toufu from plastic and cut into slices.
2. Pour lots of cooking oil into the wok, add a tea spoon of salt in it. When oil is getting hot, deep fried toufu until it changes color. Drain from the oil, ready for use.
3. Marinate pork with pepper and soy sauce.
4. Heta up 2 tbsp of oil, then add all these to wok accordingly: garlic, shallot, ginger, Chinese mushroom, pork, carrot and chilli.
5. Add salt for flavour.
6. Pour (5) onto (2).

干炒牛河 *Fried Kuay Teow with Beef

太久太久没吃炒猓条了!前几个星期终于忍不住了,去了住宅区前面的那一家华人take away餐馆,Seremban 人开的,打包了炒猓条回家吃。虽然我不吃siham,但没有siham 味的炒猓条味道真的是差了点。加上猓条又炒得不够辣,吃了很不过瘾。最终要是一包5.90欧元,大概马币36元。。。这种炒法,加上又是打包,有一点给得不是很心肝情愿。前几天在华人商店哪儿找到了猓条。买了一包回来,今天试炒猓条。第一次炒猓条,对成果相当的满意,有一点辣,但又不至于太辣的那种。很好吃!还很想念早上的那一个干炒牛河的味道!香!








食材:
河粉.......... 1 包
牛肉.......... 1/2 碗(切薄片)
蒜米.......... 1 汤匙
大葱.......... 2 汤匙(切碎)
红辣椒...... 1 条(切片)
青葱.......... 1 条(切节)
酱油.......... 适量
蚝油.......... 1 汤匙
黑酱油...... 适量
苏东油...... 少许
食油.......... 适量
胡椒粉...... 适量
做法:
1. 牛肉切薄片后腌胡椒粉和酱油。
2. 把河粉一条条分开来。
3. 用大概4汤匙的油,然后热油后,先炒蒜米至有点金黄色,再炒大葱。
4. 蒜米和大葱炒出香味后,炒牛肉,再加入辣椒。如果想加蛋,可以等牛肉炒熟后加进去,让蛋煮稍微熟一些后就可以用铲搅匀它。
5. 加入河粉。记得火要大,但要翻得快才不会粘锅。
6. 河粉遇热会软化。河粉开始软化后就可以开始用耗油,黑酱油和苏东油调味了。如果咸度不够,可以在自己加入少许的盐。
7. 调味后加入青葱一起炒。青葱熟后就即可。

Ingredients:
1 pack Kuay Teow
1/2 bowl sliced beef
1 tbsp chopped garlic
2 tbsp chopped onion
1 cut chilli
1 cut spring onion
soy sauce
1 tbsp oyster sauce
dark soy sauce/caremel sauce
squid sauce
cooking oil

Directions:
1. Marinate beef with pepper and soy sauce.
2. Pull and separate the sticky Kuay Teow.
3. Heat up 4 tbsp of cooking oil, stir garlic until it colored, then add onion to stir until it is soften.
4. Add beef to stir with (3), then follow by chilli. You could add 1-2 chicken eggs too.
5. Add Kuay Teow to stir. Must keep on stiring so that it won't stick on the wok.
6. Add osyster sauce, dark soy sauce and squid sauce to add flavour.
7. Finally, add spring onion until it is cooked.

蒸药材鸡 *Steamed Chicken with Herbs

食材:
鸡............ 1/2-1 只
玉竹........ 1 碗
当归........ 4-5 片
枸子........ 1/2 小碗
去籽红枣..... 10-12 粒
绍兴酒.... 1 汤匙
酱油........ 适量
水............ 适量
盐............ 适量
大片的锡纸..... 1-2 张

做法:
1. 鸡洗干净后,抹上少许盐。
2. 把药材拿去洗干净、浸水。
3. 把鸡和药材一起放进锡纸里包起来。
4. 包起来之前,加上适量的酱油(我通常加2大汤匙),少许水。
5. 用大火蒸40分钟或以上。要注意水量,可以加热水。
6. 蒸好后,倒入昭兴酒,就可以上桌了。
p/s: 要鸡的颜色漂亮,可以用老抽。

Ingredients:
1/2-1 chicken
1 bowl Yuzhu Chinese herb
4-5 slices Chinese herbs Dong Gui
1/2 bowl ghoji cherry
10-12 seedless red dates
1 tbsp Red Chinese Rice Wine
soy sauce
water
salt
aluminum foil
Directions:
1. Marinate chicken with some salt.
2. Wash all the herbs and immerse with water.
3. Place chicken and all the herbs in aluminum foild.
4. Before wrapping it up, add roughly 2 tbsp of soy sauce and some water.
5. Bring (4) to steam for about 40 minutes or more.
6. Once it is done, add Red Chinese Rice Wine to the chicken.
