虾面 *Chinese Noodle with Prawn Soup

那一天和老友阿June上MSN时谈到每天煮到不懂煮什么好,突然扯到虾面这个美食。谢谢June和我分享了她的食谱,虾面好好吃哦!

问题是我想我自己太贪心放了很多虾与虾壳下去熬汤,所以汤汁和多了会腻。

学会煮虾面,可以解想念家乡的另一道佳肴!

食材:
猪肉.......... 1 块 (自己加的)
虾.............. 12只
虾壳、头.. 1 碗
水煮蛋...... 2 粒
通心菜...... 适量
芽菜.......... 适量
蒜米.......... 2 汤匙
炸葱.......... 适量 (自己加的)
食油.......... 适量
水.............. 适量
盐.............. 适量

准备:
1. 通心菜和芽菜要先前烫过水备用。
2. 面条也最好先前烫水备用。

汤头煮法:
1. 热锅热油后,炒香蒜米,然后再加入虾壳一起炒至虾壳飙出香味。
2. 加入适量的水,然后用慢火慢慢熬虾壳汤头。汤头会慢慢从清水变成红色的汤头。1个钟后加入一整块的猪肉,加少许炸葱再熬半个钟。
3. 基本上汤头会很甜,只要加上少许盐就可提味。
4. 把虾加入锅内煮至熟即可收火。
5. 把猪肉从锅中提出,然后切薄片。

上菜:
1. 把面条、蛋、猪肉、芽菜和通心菜盛在碗中,然后再把虾汤头和虾倒入碗内。
2. 在(1)上面撒上少许炸葱即可。

Ingredients:
1 chunk of pork
12 prawns
1 bowl prawn shell
2 boiled eggs
some water spinach
some bean sprout
2 tbsp finely chopped garlic
some fried shallot
cooking oil
salt
water

Instructions:
1. Cook water spinach and bean sprout in boiling water. Leave from pot and drain, ready for use.
2. Cook noodle in boiling water for about 2 minutes. Leave from pot and drain, ready for use.
3. Heat the wok, stir fry garlic and prawn shell until aromatic.
4. Add water,cover the lid and simmer with low heat for an hour. Add pork and some fried shallot to the pot and simmer for another half an hour.
5. Add some salt.
6. When soup is done, add prawn to cook.
7. After prawn is cooked, remove pork from the pot and cut it into thin slices.
8. Place noodle, bean sprout, boiled egg and water spinach into a bowl. Pour prawn soup and prawn into the bowl. Sprinkle some fried shallot before it is served.
