Sambal 蛋 *Egg Sambal

好久、好久没吃sambal 蛋了!就来弄个sambal 蛋吧!



食材:
水煮蛋...... 2 粒
马来盏...... 1 汤匙
葱头.......... 8 粒
蒜头.......... 2 瓣
大条红辣椒...... 4 条
糖.............. 适量
酸子(阿三)...... 1 汤匙
食油.......... 适量
热水.......... 适量
做法:
1. 酸子浸入少许热水内(大概1/6杯),让酸子溶解,酸子肉会慢慢脱离种子,备用。
2. 热锅后不加油,用空热锅炒干马来盏,炒至香为止。
3. 把(2)、辣椒、葱头和蒜头放入搅绊机,搅至完全碎完。可以加入少许水一起搅匀。
4. 热锅,然后再热大概2大汤匙的油,把(3)加入锅内炒香。
5. 加入酸子汁和糖用慢火煮至水收到稍微感为止。
6. 加入水煮蛋翻两翻即可。

Ingredients:
2 boiled eggs
1 tbsp Belacan paste
8 shallots
2 cloves of garlic
4 red chili
sugar
1 tbsp tamarind pulp
cooking oil
hot water
Instructions:
1. Soak tamarind pulp into hot water (about 1/6 mug of water) until it melts and blend into the water , remove the seeds.
2. Heat the wok without oil, fried belacan paste until aromatic.
3. Blend (2), chilli, shallot and garlic until they are all finely blended. Recommended to add some water during the blending process.
4. Heat the wok again with 2 tbsp of cooking oil, stir (3) until aromatic.
5. Add tamarind juice and sugar and cook with low heat until it is dry (not too dry, make sure it remains abit moisture, but definately not watery).
6. Add boiled eggs and stir. Ready for serve.
