咖啡布丁甜点 *Coffee Flan

本来是应该要用炼奶的,但我怕做出来后会太甜,自己换了鲜奶加适量的白糖;另外我也没加vanila 香精。虽然味道和口感都很好,但买点失败了。我很喜欢这一道甜品,因为是咖啡味的。下一次会再接再厉的了!我为自己加油!




食材:
A.焦糖
糖..... 150g
水..... 60ml

B. 咖啡布丁
炼奶..... 400ml
鲜奶..... 200ml
Cream.... 225ml
桂皮..... 1 支
即溶咖啡..... 2 茶匙
水..... 1 茶匙
鸡蛋..... 5 粒
vanila香精..... 1 茶匙
aluminum 杯
做法:
A. 焦糖
1. 把糖加入热锅中,再加水煮至白糖完全溶解,颜色变成褐色为此。
2. 然后在每一个aluminum杯里倒入大概一汤匙的焦糖。
B. 咖啡布丁:
1. 先把炉给热了,热度维持在2.5号或160摄氏。
2. 用一汤匙的水把即溶咖啡溶解掉。
3. 热锅后,把全部的B材料加入锅内,把(2)也一起加入,然后再用小火慢慢煮至水滚。
4. 另一方面把蛋打散。
5. 把(3)和(4)混合在一起,继续打散。
6. 过后一定要把(5)滤过,再把它倒入aluminum杯里。不要忘了在aluminum杯上留大概1公分的空间。
7. 把所有的aluminum 杯放在烤炉盘里,再把热水倒入烤炉盘内。把整个烤炉盘放入烤炉里烤大概15-20分钟。再取出之前可以晃一晃aluminum杯子。要是布丁没晃,这代表布丁已经熟了。
8. 从烤炉盘里移开aluminum 杯子。
9. 冷却后再把布定放入雪柜里。
10. 享用之前,用一把小刀在aluminum的周围切开,然后把aluminum 杯子反过来,轻轻地在aluminum杯子的底部向下按,把咖啡布丁按出来,然后盛在盘子上。

Ingredients:
A.Caremel:
150g sugar
60ml water

B.Flan:
400ml condensed milk
200ml fresh milk
225ml cream
1 stick cinnamon
2 tbsp instant coffee
1 tbsp water
5 chicken eggs
1 teasp vanila essence
aluminium cup

Directions:
A. Caremel:
1. Place sugar in a hot pan, add water and keep on stiring until it turns golden brown.
2. Pour about 1 tbsp of caremel into aluminium cup to cover the bottom.

B.Flan:
1. Pre-heat oven to mark point 2.5/ 160 degree celsius.
2. Dissolve instant coffee with water.
3. Heat a pan and add all ingredients for flan to cook in medium low heat, this include the dissolved coffee.
4. Cook until boiling and off the gas.
5. Whisk the eggs.
6. Add (4) into (5), keep on whisking until everthing is evenly mixed.
7. Strain (6). After that, pour it into aluminium cup and make sure leave about 1 cm unfill.
8. Place all the aluminium cups on a baking tray that is full with hot water. Bring the tray to oven and bake for 15-20 minutes until set. Don't forget to shake the aluminium cups gentlely to make sure they are set before moving them out from the oven.
9. Remove aluminium cups from the tray and allow them to cool for a few minutes.
10. Store flan into the fridge for a few hours to chill.
11. Before serving, remove the aluminium cup from flan. Use a sharp knife to cut the edge and make flan loosen from the cup. Place cup up-side down on a serving plate, gentlely press the bottom of aluminium cup and the flan will automatically drop.
