金香炒面 *Kam Hiong Fried Noodle



食材
黄面........... 400g
虾米........... 1/3 碗
蒜米........... 1 汤匙
小葱头泥... 2 汤匙
咖哩粉....... 1 汤匙
咖哩叶....... 1 把
辣椒粉....... 1/2 汤匙
蚝油........... 1 汤匙
酱油........... 1 汤匙
苏东油....... 1 汤匙
甜黑酱油... 1 烫匙
盐............... 适量
食油........... 适量
鸡精粉....... 适量

做法:
1. 虾米浸水至软。
2. 先爆香蒜米、小葱头泥及虾米。
3. 再加入咖哩粉、辣椒粉和咖哩叶一起爆香。
4. 把面倒入锅中一起炒。
5. 加上蚝油、酱油、苏东油、甜黑酱油、鸡精粉即可。不够咸再加少许盐即可。

Ingredients:
400g yellow noodle
1/3 bowl dried shrimps
1 tbsp chopped garlic
2 tbsp chopped shallot
1 tbsp curry powder
some curry leaf
1/2 tbsp chili powder
1 tbsp oyster saurce
1 tbsp soy saurce
1 tbsp squid saurce
1 tbsp black caremel saurce
salt
cooking oil
chicken stock

Directions:
1. Immerse dried shrimps into water until soften.
2. Heat the wok, stir fried garlic, shallot and dried shrimps.
3. Add curry powder, chili powder and curry leaf.
4. Add noodle to wok and stir fried.
5. Add oyster saurce, soy saurce, squid saurce, black caremel saurce and chicken stock. Stir fried until even. You could add some salt to add flavor.
