茄子焖芫西 *Aubergine and Coriander


食材:
芫西........ 1 把(切节)
茄子........ 1 个(切块)
酱油........ 2 汤匙
水............ 适量
食油........ 适量
蒜米........ 1 汤匙
做法:
1. 先热锅热油,然后把蒜米炒香。
2. 加入茄子炒一回,然后加入少许水份和酱油,再把锅盖盖起来,用慢火焖至茄子变软。当中一定要把茄子翻几次。
3. 把芫西加入炒开。再把锅盖盖回去,继续开慢火煮2-3分钟即可。

Ingredients:
1 aubergine, cut into bite-size pieces
some coriander, cut into 3-4 inches long
2 tbsp soy sauce
water
cooking oil
1 tbsp finely chopped garlic
Directions:
1. Heat the pot with some oil, then fry garlic until it colored.
2. Add aubergine, some water and soy sauce to stir for a while. Close the pot and simmer with medium-low heat until aubergine is fully cooked and become soften. Don't forget to stir them from time to time.
3. Add coriander and continue to simmer for another 2-3 minutes.
