面粉糕汤 *Handmade Noodle Soup


食材:
面粉........ 600g
江鱼仔.... 适量
猪肉........ 适量
炸葱........ 适量
食油........ 少量
鸡精粉.... 适量
水............ 适量
胡椒粉.... 适量
盐............ 适量

准备:
A)揉面粉
1. 面粉加适量的水揉至变面团。
2. 加少许的油揉面粉。

B) 汤头
1. 猪肉切薄片,腌上盐和胡椒粉。
2. 煮开水,煮熟猪肉,可以加上少许鸡精粉调味。用江鱼仔熬汤会更好味。

C) 料
1. 江鱼仔得炸干。

做法:
1. 揉好的面团拉成一块块。
2. 把每一块拉薄后,一片片的一边拉、一边撕一小片一小片,再把它丢到正在煮的滚水中。面团越拉越薄越好。
3. 面条浮上水面后捞起,然后转放到正煮滚的汤头里即可。
4. 可以加炸葱头和炸江鱼仔一起配面条吃。

fried enjovis
fried shollot
pork
cooking oil
chicken stock
water
pepper
salt
Directions:
A) Noodle
1. Add water to flour, mix both and roll until even.
2. Add a little bit of cooking oil to (1) and keep on rolling until it turns to be tender.
B) Soup
1. Cut pork into think slices. Marinate with salth and pepper.
2. Boil water, add pork to cook. Add some chicken stock to add taste. The soup will taste even better if it is cooked with enjovis.
Directions:
1. Roll the ready made flour to become very thin, tare pieces by pieces (become handmade noodle) and put into boiling water to cook.
2. Once noodles float, romove it from boiling water to boiling soup.
3. Put small portion of (2) in a bowl and put some fried shallot and fried anjovis before serve.
