豆辨酱茄子肉碎 *Salted Soy Bean, Minced Pork and Aubergine



食材:
猪肉碎............... 1/2 碗
茄子................... 1 条
磨碎的豆辨酱... 1 汤匙
蒜米................... 1 汤匙
小葱泥............... 1 汤匙
黑醋................... 1/2 汤匙
糖....................... 1/2 汤匙
酱油................... 1 汤匙
胡椒粉............... 适量
食油................... 适量
盐....................... 适量
水....................... 适量

准备:
1. 猪肉碎腌上一些胡椒粉和酱油/盐调味。
2. 茄子切成一块块,然后先拿去油炸至软。油一定要很热茄子才可下锅,要不然茄子会吸油,造成口感很油腻。

做法:
1. 先热油,爆香蒜米和小葱,再炒肉碎。
2. 加入醋,豆辨酱和糖,再加少许的水。
3. 加少许的盐调味即可。

Ingredients:
1/2 bowl minced pork
1 aubergine
1 tbsp salted minced soy bean
1 tbsp chopped garlic
1 tbsp chopped shallot
1/2 tbsp black vineger
1/2 tbsp sugar
1 tbsp soy saurce
pepper
cooking oil
salt
water

Preparation:
1. Marinate minced pork with pepper and soy saurce/salt.
2. Cut aubergine into dice.

Directions:
1. Heat the wok, cook garlic and shallot until it change color. Add marinated pork to the wok and stir fried until pork is cooked.
2. Add black vineger, salted minced soy bean, sugar and a little bit of water. Stir until even.
3. You could add a little bit of salt for flavor before served.
